Ingredients
30 ounces cherry and kumato tomatoes or just cherry
1 (8 ounce) block miyoko's vegan mozzarella
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
4 tbsp olive oil
crispy basil
1 tbsp olive oil
1 handful sliced basil
pinch of sea salt
Instructions
add the 4 tbsp of extra virgin olive oil to a pan along with the tomatoes, seasoning and sea salt.
saute for 5 minutes on medium heat. then, add the block of mozzarella to the center.
place a lid on top and cook for 10 minutes on medium heat and then it should be done.
for the crispy basil, add the olive oil and basil to a pan and cook on medium heat for about 4 minutes. stir around until it is crispy.
add to the tomatoes and mozzarella and serve with with your favorite toasted bread.
