Vegan Baked Buffalo Mac and Cheese

happy monday! hope that everyone is super excited for this delicious baked vegan Mac and cheese dish that everyone needs on their table! this recipe actually has protein thanks to the sauce. if you’re looking for a quick and easy dinner that’s secretly healthy, look no further!

are you like me and put buffalo sauce on just about everything in sight? yep, it’s good on just about everything.

you know what buffalo sauce goes really really well with? PASTA!

Vegan Baked Buffalo Mac and Cheeseis super creamy, rich, indulgent and perfectly seasoned.

not to mention, it’s SO easy to make. this is the perfect recipe for an easy dinner, leftovers or even a holiday side dish!

you’re going to need some pasta, about 16 ounces. i used brown rice gf pasta, but just about any kind will work well.

you will want to use a pasta that holds up well though, so just keep that in mind!

the base of the sauce is made with coconut yogurt and tofu! yep, who would have guessed but i told ya, this recipe is secretly healthy.

the star of the dish is buffalo sauce though, so make sure you choose a good store-bought one if you’re not making your own.

i highly recommend primal kitchen as it’s made with incredible ingredients and the flavor is exceptional.

also, it’s not too hot, which may be good or bad depending on how spicy you like your buffalo sauce, but i think this one is just right.

other ingredients include nutritional yeast, tamari, some seasonings, and dairy free plain milk! also, some dairy free cheese for topping!

nothing fancy! you can get everything at your local grocery store and like i said, have a delicious meal made in no time.

you do boil the pasta ahead of time and cook it for the full time according to package directions.

then, in the blender, the sauce can be made in the mean time. you mix the sauce with the pasta, pour in a casserole dish and top with vegan cheese.

for vegan cheese, i used forager and miyokos cheddar.

  • nutritional yeast

Ingredients

  • 16 ounces pasta of your choosing
  • sauce
  • 1/3 cup + 1-2 tbsp buffalo sauce

  • 1/4 cup nutritional yeast

  • 8 ounces extra firm tofu

  • 1/2 cup creamy coconut yogurt

  • 1 tbsp tamari

  • 1 garlic clove

  • 1 tsp onion powder

  • 1 tsp chili powder

  • 1/2 tsp turmeric powder

  • 1 cup dairy free plain milk

  • vegan shredded cheese for topping

Directions

  • preheat the oven to 350 degrees.
  • cook the pasta fully according to package directions,
  • add the sauce ingredients to a blender and blend until a thick and smooth sauce forms.
  • add to the pasta and mix well. place in a 9 x 13 casserole dish and top with vegan shredded cheese.
  • bake at 350 for 22 minutes and enjoy! store in the fridge in an airtight container.
