good morning friends! how is everyone doing today? made ya my newest breakfast obsession, Healthy Vegan and Gluten Free Blueberry Breakfast Muffins! they’re packed with nutrients, super fluffy, and actually taste delicious.
you can have Healthy Vegan and Gluten Free Blueberry Breakfast Muffins made within 23 minutes, that’s it.
the prep time is super short, you can just throw all of the batter ingredients into a bowl, mix it well and then fold in the blueberries.
fresh or frozen will work just fine! i went with frozen because i prefer them in my baked goods, but either will be yummy.
the base is made with two types of flour, my favorite combo of all time, which you may have guessed!
oat flour and almond flour. the oat flour provides the carbs and the almond flour gives the muffins the necessary healthy fats.
these two combined with the right ingredients results in the fluffiest, yet dense and most amazing texture.
by the way, the muffins are pretty dang packed with blueberries, just the way i like them.
you can of course add more or less than i did, but i went with about 1 and 1/4 cup! you have to love it though, healthy baked goods packed with antioxidants.

another great thing about this recipe is that the base is the perfect setup for any add ins. maybe you want something other than blueberries!
chocolate chips would be perfect along with some other fruits, nuts or really anything that you think would taste delicious.
if you’re a baker, there’s a good chance you have everything in your pantry and freezer/fridge.
here’s everything you need to make Healthy Vegan and Gluten Free Blueberry Breakfast Muffins
- oat flour
- almond flour
- baking powder
- flax eggs
- baking soda
- almond extract
- coconut yogurt
- dairy free milk
- organic cane sugar, coconut sugar OR what i used, a sugar free monkfruit sweetener (lakanto) 1:1 sub
- frozen blueberries

Healthy Vegan and Gluten Free Blueberry Breakfast MuffinsCourse: Breakfast, MuffinsDifficulty: Easy
1 and 1/2 cups oat flour
1 cup almond flour
2 flax eggs (2 tbsp flax meal + 6 tbsp water)
1 tsp baking powder
1 tsp baking soda
1/4 cup sugar sub like lakanto OR coconut sugar/organic cane sugar
1 tsp almond extract
1/2 cup dairy free milk
1/4 cup coconut yogurt
1 and 1/4 cup frozen blueberries
- preheat the oven to 350 degrees.
- mix the wet ingredients first and then add in the dry ones. combine until a thick batter forms.
- fold in the blueberries and then scoop a little more than 1/4 cup full of batter into muffin cups.
- bake at 350 degrees for 23 minutes and enjoy!
- store in the fridge or freezer in an airtight container.
