Ingredients
1 and 1/2 cups oat flour
1 cup almond flour
2 flax eggs (2 tbsp flax meal + 6 tbsp water)
1 tsp baking powder
1 tsp baking soda
1/4 cup sugar sub like lakanto OR coconut sugar/organic cane sugar
1 tsp almond extract
1 cup dairy free milk
1/4 cup coconut yogurt
1 and 1/4 cup frozen blueberries
Instructions
preheat the oven to 350 degrees.
mix the wet ingredients first and then add in the dry ones. combine until a thick batter forms.
fold in the blueberries and then scoop a little more than 1/4 cup full of batter into muffin cups.
bake at 350 degrees for 30 minutes and enjoy!
store in the fridge or freezer in an airtight container.
