Cheesy Vegan Cauliflower Scalloped Potatoes

it’s almost Christmas time, and we need some more side dishes in our lives, right? well no worries because i will make your life easier with Cheesy Vegan Cauliflower Scalloped Potatoes! secretly really healthy and still packed with flavor, so we’re here for it right?!

oooo where do i begin? the creamy and dreamy cauliflower sauce? ok, how about there.

well, you’re going to boil some cauliflower and then add it to a blender with all of the other fabulous ingredients.

these ingredients include coconut cream, garlic, onion powder, hot sauce, chili powder, nutritional yeast and sea salt.

yep, that’s it! you can make this recipe super easily but it will require a little bit more time than my other ones.

that’s simply because you have to boil the cauliflower, make the sauce, and then bake the potatoes in the oven.

trust me though, it’s way easier than most recipes! plus the ingredients are INCREDIBLE.

if you’re looking to go all out for the holidays, then that’s totally amazing and understandable, but if anyone is looking for a lighter dish, this is it.

you could even use sweet potatoes in the recipe, it would still be delicious.

as for the topping, i just went with store-bought vegan cheese and any brand works well! just go with your favorite!

since this is made from predominately veggies, those seasonings are really important. i added some sea salt to the potatoes and the sauce.

you should always season to taste and do a check. if it needs more, then add more.

that’s why it’s best to be conservative at first and then add more as needed.

the total baking time is an hour and ten minutes. the scalloped potatoes bake for 35 minutes covered with aluminum foil at 375 degrees.

then, you uncover the potatoes and bake them another 35 minutes. it’s really important you thinly slice the potatoes so they cook all the way through.

if you do cut them thicker than i did and they need more baking time, that’s ok! i always do a fork check.

Ingredients

  • sauce
  • 1 head cauliflower cut into flowers and boiled for about 15 min until tender

  • 1/3 cup nutritional yeast

  • 1/3 cup heavy coconut cream

  • 1 cup dairy free plain unsweetened milk

  • 1 tbsp minced garlic

  • 1/2 tbsp onion powder

  • 1/2 tsp sea salt

  • 1/2 tbsp hot sauce

  • potatoes
  • 6 russet potatoes cut into thin slices

  • 3 tbsp extra virgin olive oil

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1/2 tsp sea salt

  • 1 bag of vegan cheese for topping

Directions

  • preheat the oven to 350 degrees.
  • add all of the sauce ingredients to a blender and blend until a thick and smooth consistency.
  • add the extra virgin olive oil and seasonings to the sliced potatoes and combine well.
  • then pour the sauce over the potatoes and mix well. add to a 9 x 13 casserole dish
  • top with the vegan shredded cheese and bake at 375 covered with aluminum foil for 35 minutes.
  • remove the foil and bake another 35 minutes and then enjoy!
