Ingredients
bagels of your choosing and a couple of avocados
vegan spicy egg salad
14 ounces extra firm tofu
1 can (15 ounces) chickpeas rinsed and drained
1/3 cup plain creamy coconut yogurt
1/4 cup plain hummus
1 tbsp sriracha or gochujang paste
2 tbsp liquid aminos
1 tsp garlic powder (can add more if you like)
1 tsp onion powder
Instructions
add the chickpeas and tofu to a food processor. pulse a few times until a grainy consistency forms.
add to a large bowl with the other spicy vegan egg salad ingredients and mix well.
top some bagels with mashed avocado and then the vegan egg salad and enjoy!
