for the crust:
1 1/2 cups almond flour
3 tbsp arrowroot starch
1/4 cup oat flour
1/4 cup melted vegan butter
1/4 cup maple syrup
1/3 cup creamy tahini
for the filling:
8 ounces chopped pecans
1/3 cup maple syrup
1/4 cup vegan butter
1/2 tbsp cinnamon
1/2 tbsp vanilla extract
1/4 cup coconut sugar
- preheat the oven: preheat your oven to 350 degrees fahrenheit (175 degrees celsius).
- prepare the crust:
in a mixing bowl, combine all of the crust ingredients. mix the ingredients until well combined. press the mixture into the bottom of a parchment paper lined 9 inch baking dish. bake the crust in the preheated oven for 12 minutes.
- prepare the filling:
while the crust is baking, prepare the filling. in a saucepan over medium-high heat, combine chopped pecans, maple syrup, vegan butter, cinnamon, vanilla extract, and coconut sugar. cook the mixture on the stovetop for 2 minutes, stirring continuously.
