Vegan and Gluten-Free Tahini Pecan Pie Bars

for the crust:
1 1/2 cups almond flour
3 tbsp arrowroot starch
1/4 cup oat flour
1/4 cup melted vegan butter
1/4 cup maple syrup
1/3 cup creamy tahini
for the filling:
8 ounces chopped pecans
1/3 cup maple syrup
1/4 cup vegan butter
1/2 tbsp cinnamon
1/2 tbsp vanilla extract
1/4 cup coconut sugar
Directions
- preheat the oven: preheat your oven to 350 degrees fahrenheit (175 degrees celsius).
- prepare the crust:
in a mixing bowl, combine all of the crust ingredients. mix the ingredients until well combined. press the mixture into the bottom of a parchment paper lined 9 inch baking dish. bake the crust in the preheated oven for 12 minutes. - prepare the filling:
while the crust is baking, prepare the filling. in a saucepan over medium-high heat, combine chopped pecans, maple syrup, vegan butter, cinnamon, vanilla extract, and coconut sugar. cook the mixture on the stovetop for 2 minutes, stirring continuously. - assemble and bake:
after the crust has baked for 12 minutes, remove it from the oven. pour the prepared pecan filling over the crust, spreading it evenly. return the dish to the oven and bake for an additional 25-27 minutes, or until the filling is set. - cool and serve:
allow the bars to cool completely before slicing. once cooled, cut into bars and enjoy your vegan and gluten-free tahini pecan pie bars!
