Feel Good Chocolate Peanut Butter & Banana Oatmeal Bake

2 medium overripe bananas, mashed
1/2 cup runny peanut butter
1/2 cup dairy-free yogurt
1/3 cup dairy-free milk
1 tsp vanilla extract
1 tsp baking powder
1/3 cup gluten-free all-purpose flour
3 cups old-fashioned oats
1/3 cup mini vegan chocolate chips (or however much you want)
Directions
- preheat your oven to 350°f (175°c). grease a 9×13 inch casserole dish.
- in the casserole dish, combine the mashed bananas, peanut butter, dairy-free yogurt, dairy-free milk, and vanilla extract. mix well until everything is thoroughly combined.
- add in the baking powder and gluten-free all-purpose flour. stir until incorporated.
- fold in the old-fashioned oats until they are evenly distributed throughout the mixture.
- sprinkle the mini vegan chocolate chips over the top of the oatmeal mixture.
- place the casserole dish in the preheated oven and bake for 18-20 minutes, or until the edges are golden brown and the center is set.
- once baked, remove from the oven and allow it to cool for a few minutes before slicing and serving.
