Ingredients
2 medium overripe bananas, mashed 1/2 cup runny peanut butter 1/2 cup dairy-free yogurt 1/3 cup dairy-free milk 1 tsp vanilla extract 1 tsp baking powder 1/3 cup gluten-free all-purpose flour 3 cups old-fashioned oats 1/3 cup mini vegan chocolate chips (or however much you want)
Instructions
preheat your oven to 350°f (175°c). grease a 9x13 inch casserole dish.
in the casserole dish, combine the mashed bananas, peanut butter, dairy-free yogurt, dairy-free milk, and vanilla extract. mix well until everything is thoroughly combined.
add in the baking powder and gluten-free all-purpose flour. stir until incorporated.
fold in the old-fashioned oats until they are evenly distributed throughout the mixture.
sprinkle the mini vegan chocolate chips over the top of the oatmeal mixture.
place the casserole dish in the preheated oven and bake for 18-20 minutes, or until the edges are golden brown and the center is set.
once baked, remove from the oven and allow it to cool for a few minutes before slicing and serving.
