you won’t believe how high in protein this is! Vegan and Gluten-Free High Protein Turkey Loaf is made with tofu and chickpea flour.

they are the ULTIMATE combo and create such a delicious, dense and moist loaf. it’s kind of incredible how much this does actually resemble turkey.

you can serve Vegan and Gluten-Free High Protein Turkey Loaf with cranberry sauce like i did if you like, or some vegan gravy would be fantastic.

this year, i am going to make a mushroom gravy, so that’s what i will serve it with on thanksgiving and Christmas!

Vegan and Gluten-Free High Protein Turkey Loaf is really easy to make because it’s made in the food processor.

you can just throw everything in there and blend until a thick “dough-like” mixture forms.

it’s easy to mold and handle by the way! then, you can form the mixture into a loaf and pop it in the oven.

Vegan and Gluten-Free High Protein Turkey Loaf bakes with aluminum foil on top of the pan for 40 minutes.

then, the foil is removed and it’s baked for another 12 minutes. this will create a nice finishing crust on the top.

one loaf should yield about 4 servings (two pieces each!).

to serve a larger crowd, you can always just make 2 or even 3 loaves!

extra firm protein

chickpea flour

arrowroot starch

vegetable broth

table or herb blend seasoning (used salt free)

garlic powder

onion powder

sea salt and pepper

dijon mustard

liquid aminos

any sauce you would like for topping such as cranberry sauce or gravy!

Ingredients

  • 16 ounces extra firm tofu (pressed to get rid of liquid)

  • 1/4 cup arrowroot starch

  • 1 cup chickpea flour

  • 1/2 cup vegetable broth

  • 1 tbsp table blend or herb seasoning

  • 1/2 tbsp liquid aminos

  • 1/2 tbsp dijon mustard

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • sea salt and pepper to taste (may want to omit if seasoning has salt in it)

  • extra virgin olive oil for brushing the top of loaf

Directions

  • preheat the oven to 375 degrees.
  • add all of the loaf ingredients to a food processor and blend until a thick mixture forms.
  • mold the mixture into a loaf in a parchment lined baking pan.
  • cover with aluminum foil and bake at 375 degrees for 40 minutes.
  • remove the loaf after 40 minutes, uncover, brush some olive oil on the top and bake another 12 minutes.
  • serve with cranberry sauce or gravy and enjoy!
