Lightened Up Vegan Apple Bread Cake is the move because it’s basically apple season! who is so excited about it like me?!

i have been itching for cozy season even though it will probably never happen since i live in Florida, lol.

nonetheless, i do love to celebrate with yummy seasonal foods, like Lightened Up Vegan Apple Bread Cake!

this is a hybrid of bread and cake, hence the name. it’s a dense bread-y cake that is packed with flavor and just the perfect amount of sweetness.

the apples in the cake and on top have been caramelized as they are sautรฉed before the baking process.

this ensures the cake has a greater depth of flavor rather than just using plain and uncooked apples.

in turn, it creates this gooey and moist texture on the inside, which is divine.

if you grease your baking pan really well, i recommend adding a layer of the sautรฉed apples to the bottom so that you can flip the cake and get a gorgeous caramelization.

however, beware that if your pan is not very well greased or lined with parchment paper, the apples will stick.

for this bread cake, i use pumpkin spice, maple syrup, cinnamon, vanilla extract and almond extract. that’s where the majority of the flavors come from.

the sticky spiced goodness from the sautรฉed apples is honestly the best part!

Ingredients

  • cake batter
  • 2 cups organic all purpose unbleached flour

  • 1 tsp baking powder

  • 3/4 cup organic raw cane sugar (1:1 subs will work)

  • 1/4 cup flax meal

  • 1 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1/2 tsp almond extract

  • 2 tsp vanilla extract

  • 1/3 cup creamy coconut yogurt

  • 1 cup unsweetened dairy free milk

  • apples
  • 1 and 1/2 medium-large honey crisp apples cut into small pieces

  • 1/4 cup maple syrup

  • 2.5 tbsp coconut oil

  • 1 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1 tbsp tapioca flour

Directions

  • preheat the oven to 350 degrees.
  • sautรฉ the apple ingredients minus the tapioca flour in a pan on medium-hight heat for 3 minutes. then, add 1 tbsp of tapioca flour and cook another minute or until the mixture does not have any liquid left (stir often).
  • mix the cake batter ingredients until a thick batter forms. fold in about half of the apples and mix well.
  • you can add the other half of the apple mixture to a very well greased or parchment lined 8 x 8 cake pan. pour the batter on top and bake at 350 degrees for 50 minutes.
  • enjoy with vegan vanilla ice cream or cream cheese. store in the fridge and warm up before eating.
