You Won’t Believe It’s Vegan Cottage Cheese

1 cup very thick and creamy tangy coconut yogurt (culina, cocojune, or harmless harvest rich and creamy)
1 cup crumbled silken tofu (ensure excess water has been removed)
1 tbsp fresh lemon juice
1/4 or 1/2 tsp sea salt
Directions
- in a mixing bowl, combine the thick and creamy coconut yogurt with the crumbled silken tofu.
- add the fresh lemon juice and sea salt to the mixture.
- mix everything together until well combined.
- transfer the mixture into an airtight container.
- refrigerate overnight to allow flavors and textures to meld.
- serve with your favorite toppings and enjoy!
