Ultra Creamy Cauliflower Oats with Caramelized Bananas

1/2 cup oats
3/4 cup frozen riced cauliflower
1/2 cup dairy-free yogurt
1 tsp vanilla extract
1 1/2 cups water
1 banana, sliced
1 tbsp vegan butter
1-2 tbsp maple syrup (adjust to taste)
1/2 tsp cinnamon
Directions
- prepare the oatmeal:
-in a pot, combine the oats, cauliflower, water, yogurt and vanilla extract.
-bring the mixture to a boil.
-once boiling, reduce the heat to medium and let it cook for about 8-10 minutes (could be slightly longer or shorter), stirring periodically, until the oats are cooked and cauliflower is tender.
-remove from heat and set aside. - caramelize the bananas:
-in a separate pan, melt the vegan butter over medium heat and then add the maple syrup
-add the sliced banana and cinnamon to the pan and sauté for about 4-5 minutes, until they start to soften and caramelize. - serve:
-divide the creamy cauliflower oats into serving bowls.
-top with the caramelized bananas.
-optionally, you can drizzle more maple syrup or sprinkle additional cinnamon on top for extra sweetness and flavor.
-serve hot and enjoy!
