Jump to Recipe

hi friends and happy weekend!

today, let’s dig into some fresh Feel Good Veggie, Bean and Mango Salsa Salad!

this vibrant dish is not only bursting with color but also with flavor and nutrition. we are seriously obsessed over here.

taste and texture:

picture the sweet juiciness of ripe mangoes complemented by the savory crunch of bell peppers and the creaminess of avocado.

this salad hits all the right notes with its balanced blend of flavors.

the tanginess from lime juice and the hint of garlic powder add depth to every bite.

the combination of ingredients creates a medley of textures, from the softness of mangoes and avocados to the crunch of bell peppers and onions, making each mouthful 10/10.

how to eat:

the beauty of this dish lies in its versatility!

you can enjoy it as a refreshing salad on its own, served as a side dish to complement a main course, or even as a topping for grilled proteins like tofu or tempeh.

feeling creative? try using it as a filling for wraps or tacos for a flavorful twist.

feeling snacky? grab some tortilla chips and use this salsa as a dip for a satisfying snack.

nutritional benefits:

packed with nutrient-rich ingredients like bell peppers, mangoes, black beans, and avocados, this salad is not only delicious but also incredibly nutritious.

bell peppers are rich in vitamin c and antioxidants, while mangoes provide a hefty dose of vitamin a and fiber.

black beans offer plant-based protein and fiber, while avocados contribute heart-healthy fats and potassium.

together, these ingredients make for a wholesome dish that nourishes both body and soul.

substitution options:

don’t have all the ingredients on hand? no worries!

feel free to get creative and swap out ingredients based on your preferences or what’s available. don’t have mangoes?

try using pineapple or peach for a similar sweet flavor.

prefer a different type of bean? cannellini beans or chickpeas would work wonderfully here. not a fan of feta-style vegan cheese?

simply omit it or try using a different variety.

if you somehow have leftovers (though it’s hard to imagine with a dish this tasty), you can store the salad in an airtight container in the refrigerator for up to two days.

just be sure to give it a good stir before serving to redistribute the flavors.

so there you have it, y’al! the feel good veggie, bean, and mango salsa salad is not just a salad—it’s BLISS!
