Instructions
in a large mixing bowl, combine diced red bell peppers, diced mango, diced red onion, chopped green onions, rinsed and drained black beans, cubed avocados, crumbled vegan feta, and freshly chopped cilantro.
in a small bowl, whisk together lime juice, agave, extra virgin olive oil, garlic powder, and sea salt until well combined to create the dressing. you can also add this directly to the salad in one bowl!
pour the dressing over the salad ingredients in the large mixing bowl.
gently toss all the ingredients together until evenly coated with the dressing.
taste and adjust seasoning if necessary, adding more salt or lime juice according to your preference.
once well combined, serve immediately and enjoy your feel good veggie, bean and mango salsa salad!
