get ready to be amazed beyond belief. i know we all think our recipes are the best BUT for vegan carrot cake…..it won’t get better than The Best One Bowl Vegan Carrot Cake. this cake exceeds every expectation i had in terms of taste, texture, ingredients and presentation. it’s a lightened up version of a classic and ya know, vegan style.

if you’re looking for the ultimate spring dessert, don’t look any further. whether you’re celebrating easter, a birthday or ya know, just living your life, this cake will be your go to.

you can also see the video below! it’s the easiest cake you’re ever going to make! all you have to do is throw everything in a bowl and in no specific order.

as long as everything gets mixed together at the end, you’re good to go. as far as the frosting goes, oh my gosh there are so many avenues you could take.

from just plain vegan yogurt or cream cheese, to a decadent store bought vanilla frosting like what i used, anything will work! a glaze made with powdered sugar would be really nice too.

the inside is sooooo fluffy and perfect ah! there’s yummy textures from the walnuts and raisins too. they’re optional, you don’t have to add either to the batter but i do think they’re awesome in this cake.

here’s everything you need!

  • oat flour

  • almond flour

  • baking powder

  • cinnamon

  • nutmeg

  • vanilla extract

  • sunflower seed butter or nut butter

  • organic brown sugar

  • maple syrup

  • extra virgin olive oil

  • orange juice

  • carrots

  • dairy free milk

  • walnuts

  • raisins

  • vanilla frosting

here’s a pro tip! i know i’ve said this before but just in case anyone missed it, do NOT grate your carrots by hand, it’s such a waste of time and energy lol.

throw 3-4 large carrots cut into smaller pieces in the food processor and blend away on high. you will get the perfect “grated” texture every single time.

the batter should be pretty thick! after 40 minutes, the cake is PERFECT. it’s still sort of fudgy but baked through.

Ingredients

  • 2 cups oat flour

  • 1 cup almond flour

  • 1/2 tbsp baking powder

  • 1/2 tbsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tbsp vanilla extract

  • 2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water. mix and let set couple of minutes)

  • 1/3 cup sunflower seed butter

  • 1/2 cup organic light brown sugar (used wholesome)

  • 1/4 cup maple syrup

  • 1/4 cup olive oil

  • juice of 1/2 an orange

  • 1 cup packed down grated carrot

  • 1 cup unsweetened dairy free milk

  • 1/2 cup chopped walnuts

  • 1/2 cup raisins

  • store bought vanilla frosting for topping-see text for brand

Directions

  • preheat the oven to 350 degrees. mix all ingredients in a bowl and fold in the walnuts and raisins last.
  • combine well until a thick batter forms.
  • add to a round cake pan either greased or lined with parchment paper.
  • bake at 350 degrees for 40 minutes.
  • cool down completely, add the frosting and enjoy!
  • store in the fridge or freezer in an airtight container.
