The Best Vegan Classic Strawberry Cake is SO fluffy, moist and just all around incredibly delicious.

in fact, you will probably have a hard time believing this is a vegan cake.

while the cake itself has freeze dried strawberries in it, you can omit those to just make a plain vanilla cake!

if you want funfetti, add a dash of almond extract and sprinkles, there are lots of possibilities as this is a versatile base.

The Best Vegan Classic Strawberry Cake is not gluten free and i have not tried making this with gluten free flour.

you’re welcome to experiment, but please bear in mind that results will not be the same :).

as for the strawberry frosting, i took a shortcut here!

i used store bought vanilla frosting and added freeze dried strawberries.

to ensure the frosting blends well, just whip the frosting with the strawberries in a food processor until it turns pink!

baking powder

baking soda

organic corn starch (arrowroot should work too)

organic raw organic cane sugar

dairy free yogurt

applesauce

apple cider vinegar

avocado oil or olive oil

vanilla extract

freeze dried strawberries

store bought vanilla frosting (or make your own!)

that’s simple enough right!? you can definitely find all of these ingredients at most grocery stores too.

Ingredients

  • 2 cups all purpose unbleached organic flour

  • 1 tbsp organic corn starch

  • 1/2 tbsp baking powder

  • 1/2 tbsp baking soda

  • 1 cup organic raw cane sugar

  • 1/3 cup dairy free plain yogurt

  • 1 tbsp apple cider vinegar

  • 1/3 cup unsweetened applesauce

  • 2 tbsp avocado oil

  • 1 cup dairy free milk

  • 1/2 tbsp vanilla extract

  • 1/3-1/2 cup crushed freeze dried strawberries

  • store bought vanilla frosting mixed in a food processor with more freeze dried strawberries
  • strawberry jam if wanted

Directions

  • preheat the oven to 350 degrees.
  • mix the cake batter ingredients until a thick yet somewhat runny batter forms. then, fold in the freeze dried strawberries.
  • divide in half and add to two well-greased 8 x 8 inch round baking pans.
  • bake at 350 degrees for 30 minutes. cool down completely before layering and frosting the cakes. enjoy!
