- in a mixing bowl, combine the organic oats, maple syrup, dairy-free yogurt, flax meal, chia seeds, and dairy-free milk. stir until well combined.
- divide the oat mixture evenly among four jars, filling each jar about halfway.
- in a small saucepan, combine the frozen blueberries, water, and maple syrup. cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens to a jam-like consistency, about 7 minutes. then, add the arrowroot starch and cook another couple of minutes. remove from heat and let cool slightly.
- spoon the blueberry jam over the oat mixture in each jar, dividing it evenly among the jars.
- add a layer of fresh blueberries on top of the blueberry jam in each jar.
- sprinkle pumpkin seeds and sunflower seeds over the blueberries in each jar, creating a light layer.
- if desired, top each jar with a small dollop of peanut butter or nut butter.
- seal the jars and refrigerate overnight, or for at least 4 hours, to allow the flavors to meld together and the oats to soften.
- enjoy your hormone-friendly oats straight from the jar or transfer to a bowl before eating.
