Ingredients
1 cup organic oats 1 cup dairy-free yogurt 1/4 tablespoons flax meal 2 tablespoons chia seeds 1 and 1/4 cup dairy-free milk 1 tbsp maple syrup 1/2 cup blueberries per jar, so 2 cups total 1/4 cup pumpkin seeds 1/4 cup sunflower seeds peanut butter or nut butter (optional) jam
1 cup frozen blueberries
1 cup water
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 tbsp arrowroot starch
Instructions
in a mixing bowl, combine the organic oats, maple syrup, dairy-free yogurt, flax meal, chia seeds, and dairy-free milk. stir until well combined.
divide the oat mixture evenly among four jars, filling each jar about halfway.
in a small saucepan, combine the frozen blueberries, water, and maple syrup. cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens to a jam-like consistency, about 7 minutes. then, add the arrowroot starch and cook another couple of minutes. remove from heat and let cool slightly.
spoon the blueberry jam over the oat mixture in each jar, dividing it evenly among the jars.
add a layer of fresh blueberries on top of the blueberry jam in each jar.
sprinkle pumpkin seeds and sunflower seeds over the blueberries in each jar, creating a light layer.
if desired, top each jar with a small dollop of peanut butter or nut butter.
seal the jars and refrigerate overnight, or for at least 4 hours, to allow the flavors to meld together and the oats to soften.
