this dish is perfect if you’re serving lots of people and with the hot weather coming for summer, you can easily make it into a yummy pasta salad! add tofu or your vegan protein of choice to make it extra packed with nutrients. you can also serve it as a side dish, which makes this meal versatile no matter the situation (or weather)!
