Ingredients

  • 1 and 1/4 cup sugar
    1/2 cup thick vegan yogurt
    1 tbsp apple cider vinegar
    1 tsp vanilla extract
    1/3 cup melted vegan butter
    1-2 tsp lemon extract (adjust to your taste)
    2 tbsp lemon juice
    2 tbsp lemon zest
    1/2 tbsp baking powder
    1/2 tbsp baking soda
    2 cups flour

  • glaze- lakanto powdered sugar sub + lemon juice

Directions

  • preheat your oven to 350°F (175°C). in a large mixing bowl, combine sugar, vegan yogurt, apple cider vinegar, extracts, melted vegan butter, lemon juice, and lemon zest. mix well.
  • in a separate bowl, whisk together baking powder, baking soda, and flour. gradually add the dry ingredients to the wet ingredients, mixing until just combined. be careful not to overmix.
  • pour the batter into a greased loaf pan. bake in the preheated oven for approximately 42-52 minutes or until a toothpick inserted into the center comes out clean. it’s important to monitor your bread as ovens are different. check at 42 minutes and if the toothpick is not clean, continue to bake.
  • once baked, remove the loaf from the oven and allow it to cool in the pan for a bit before transferring it to a wire rack to cool completely.
