Vegan and Gluten-Free Banana Walnut Protein Cookies

1 cup oat flour
1/2 cup protein powder
1 cup mashed banana
1 tsp baking powder
1/3 cup runny peanut butter
1/4 cup yogurt (use dairy-free yogurt for vegan option)
1/2 cup chopped walnuts
Directions
- preheat your oven to 350°f (175°c). line a baking sheet with parchment paper or lightly grease it.
- in a food processor, combine oat flour, protein powder, mashed banana, baking powder, peanut butter, and yogurt. blend until a smooth dough forms.
- add chopped walnuts to the dough in the food processor. pulse a few times to incorporate the walnuts evenly into the dough.
- using a large ice cream scooper that’s been lightly oiled, scoop out portions of the dough onto the prepared baking sheet. you should be able to make about seven cookies.
- with slightly wet hands, flatten each ball of dough into a cookie shape. the dough will be sticky, so wetting your hands will prevent it from sticking too much.
- place the baking sheet in the preheated oven and bake for about 18 minutes, or until the cookies are lightly golden brown around the edges.
- once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
