I want everyone to enjoy my recipes, both vegans and non-vegans alike! Whether you’re a well-seasoned vegan cook, not vegan at all, or just want to eat more plant-based recipes, my goal is to reduce stress when it comes to making vegan dishes.

By simplifying the prep time, cooking process and ingredients, vegan cooking becomes so much more approachable, which in turn makes the lifestyle much easier. Everything is carefully crafted and made with your busy schedule in mind.

I’m so excited to be sharing my blog with you! Whether you found me through Instagram, Pinterest or just Google search, I am so grateful that you’re here! My heart and soul goes into developing recipes and sharing foods + products that I love with you. My journey to veganism began about five years ago when I started law school. Little did I know at the time that veganism would not only transform my lifestyle, but also the trajectory of my future career.

I graduated with a dual JD/MBA in May 2020 and knew exactly what I wanted to do afterwards- turn upbeetandkaleingit into a full-time job. Developing recipes and sharing veganism with my amazing community brings me the utmost joy. Your support means the absolute world to me and I can’t wait to see what the future holds!
