Unbelievably Vegan Apple Pie Bread

hiiii, friends! welcome to apple week on my food blog.

i’m thrilled to share this first INCREDIBLE recipe that’s not only irresistibly delicious but also entirely vegan – Unbelievably Vegan Apple Pie Bread!

this moist and flavorful apple pie bread is the perfect way to start apple week. it’s bursting with autumnal flavors, and the sautéed apples add a pie-filling twist to this classic treat.

i hope you enjoy baking and indulging in this recipe as much as i did. happy apple week, everyone! 🍎🍂

the sautéed honeycrisp apples bring a natural sweetness with a hint of caramelization, reminiscent of classic apple pie, which is just bliss in a bite.

a warm, aromatic note of cinnamon adds a cozy touch that adds so much flavor too!

the banana and vanilla extract contribute subtle sweetness and add depth to the overall taste, creating a balance with the all-purpose organic unbleached flour and coconut sugar.

this balance ensures a satisfying sweetness without overwhelming sugariness, making it perfect for a special breakfast, brunch, or dessert.

ok, let’s talk about topping options. while frosting is my go-to yummy choice, there are numerous ways to elevate your apple pie bread:

classic frosting: add a vegan cream cheese frosting over the bread for a decadent touch. vanilla store-bought frosting is great by the way- i love simple mills or miss jones!

powdered sugar dusting: keep it simple with a dusting of powdered sugar. this option lets the flavors of the bread shine while adding a touch of elegance, hehe.

maple glaze: combine powdered sugar with a bit of maple syrup for a glossy and sweet glaze. it imparts a rich, fall flavor.

caramel drizzle: elevate your bread with a luscious caramel drizzle. vegan caramel sauce can be easily made using coconut milk, sugar, and a dash of vanilla.

fresh fruit: a few fresh apple slices or berries on top can be a visually appealing and fruity addition. just add them after the bread is done baking!

the beauty of this recipe is its versatility. you can mix and match toppings to suit your preferences or get creative with your own unique ideas. whichever option you choose, it’ll be ridiculously tasty.

Ingredients

  • 2 cups all-purpose organic unbleached flour
    1/2 tbsp baking powder
    1 tsp baking soda
    1 cup coconut sugar
    1 tbsp apple cider vinegar
    1/3 cup melted vegan butter
    1/3 cup mashed overripe banana
    3/4 cup dairy-free milk
    1/2 tbsp vanilla extract
    1 and 1/2 tsp cinnamon
    pinch of salt

  • for the sautéed apples:
1 honeycrisp apple, cut into small cubes
    2 tbsp coconut oil
    2 tbsp maple syrup
    1 tsp cinnamon

Directions

  • start by preheating your oven to 350°F (175°C) and greasing a standard loaf pan that’s 5 x 9 inches.
in a large mixing bowl, combine the all-purpose organic unbleached flour, baking powder, coconut sugar, and a pinch of salt. mix them together until well combined.
  • in a separate bowl, whisk together the apple cider vinegar, melted vegan butter, mashed overripe banana, dairy-free milk, and vanilla extract until the mixture is smooth and well incorporated.
gradually add the wet mixture to the dry ingredients, stirring gently until a thick batter forms.
  • now, let’s prepare the sautéed apples. in a pan over medium heat, melt the coconut oil. add the honeycrisp apple cubes, maple syrup, and cinnamon. sauté them until the apples become tender and slightly caramelized. remove them from the heat and set aside.
get rid of excess oil and then gently fold the sautéed apples into your batter.
  • pour the batter into your greased loaf pan and spread it out evenly.
bake in the preheated oven for about 52 minutes or until a toothpick inserted into the center comes out clean. the aroma of apple pie will fill your kitchen, and you’ll know it’s almost time to enjoy.
  • once done, remove the apple pie bread from the oven and let it cool in the pan for about 10 minutes. then, transfer it to a wire rack to cool completely.
slice a generous piece, serve it with your favorite dairy-free ice cream or a dollop of coconut whipped cream, and savor the unbelievably vegan apple pie bread!
