1 can (15 oz) chickpeas, drained and rinsed
1/2 cup vanilla protein powder
1/4 cup maple syrup
1/4 cup dairy-free milk (such as almond milk)
1/4 cup almond butter
1 teaspoon vanilla extract
1 tablespoon arrowroot starch (or cornstarch)
1/3 cup vegan chocolate chips folded in (optional, for topping)
Directions
- preheat your oven to 350°f (175°c). grease or line an 8×8-inch baking dish with parchment paper.
- blend the chickpeas, vanilla protein powder, maple syrup, dairy-free milk, almond butter, vanilla extract, and arrowroot starch in a food processor or blender until smooth and well combined.
- fold in chocolate chips: if using chocolate chips, gently fold them into the batter until evenly distributed.
- pour the batter into the prepared baking dish, spreading it out evenly with a spatula.
- bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- cool the blondies in the pan for about 30 minutes. then, place them in the fridge to cool down further and set. this is an important step :).
- slice the cooled blondies into squares and serve. enjoy your high protein vegan blondies!

These are so delicious for something on the go and easy to make. I added in maca powder, hemp seeds, and topped them with melted chocolate too. I swapped the nut butter for tahini and only had a loaf pan on hand. Will definitely make them again!

Have you or any of your readers commented on the results using whey or a whey/casein blend? I couldn’t find any comments on using complete protein substitutes. I also know this may have been posted somewhere on IG or Pinterest with reader reviews in the comments (note: whichever sm giant figures out how to sync all comments related to the same original post so that no matter how many times you repost a recipe on IG, Pinterest, Tik of the Toks, if the hyperlink is the same, the comments still sync, will make a killing).
