how to make them

  1. make the dough: in a food processor, combine 1 and 2/3 cups gluten-free oat flour, 1/3 cup almond flour, 1/3 cup runny almond butter, 4 tbsp maple syrup, 1/4 cup + 1-4 tbsp dairy-free milk, and 1 tsp vanilla extract. process until smooth and the dough comes together. if the dough is too dry, add more milk, one tablespoon at a time.
  2. roll out the dough: place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thickness. cut the dough into 8 larger squares.
  3. make the filling: in a food processor, combine 1 cup pitted dates (soaked in warm water for 10 minutes), 1 tsp ground cinnamon, 2 tbsp gluten-free oat flour, 1 tsp vanilla bean paste, and 2 tbsp almond butter. process until smooth.
  4. assemble the pop tarts: place a spoonful of filling in the center of each dough square. place another dough square on top and seal the edges with a fork.
  5. make the glaze: in a small bowl, mix 2 tbsp melted coconut oil, 1 tsp ground cinnamon, and 2 tbsp date sugar. drizzle or spread the glaze over the top of the pop tarts.

Ingredients
  

  • dough ingredients: 1 and 2/3 cups gluten-free oat flour 1/3 cup almond flour 1/3 cup runny almond butter or pecan butter 4 tbsp maple syrup 1/4 cup + 1-4 tbsp dairy-free milk 1 tsp vanilla bean paste or extract
  • filling Ingredients: 1 cup dates, pitted and soaked in warm water for 10 minutes 1 tsp ground cinnamon 1 tsp vanilla bean paste 2 tbsp almond butter
  • glaze ingredients: 2 tbsp coconut oil, melted 1 tsp ground cinnamon 2 tbsp date sugar

Method
 

  1. in a food processor, combine the gluten-free oat flour, almond flour, almond butter (or pecan butter), maple syrup, dairy-free milk, and vanilla extract.
  2. process until the dough comes together and is smooth. if the dough is too dry, add more dairy-free milk, one tablespoon at a time, until the desired consistency is achieved.
  3. roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. cut the rolled dough into 8 larger squares.
  4. drain the soaked dates and place them in a food processor. add the ground cinnamon, oat flour, vanilla bean paste, and almond butter.
  5. process until smooth and well combined. if the mixture is too thick, you can add a small amount of water to achieve the desired consistency.
  6. place a spoonful of the filling in the center of each dough square, spread, then place another dough square on top. seal the edges with a fork.
  7. in a small bowl, combine the melted coconut oil, ground cinnamon, and date sugar. stir until well mixed.drizzle or spread the glaze over the top of the assembled pop tarts.
  8. place in the freezer for 30 minutes to set and enjoy!
