Incredibly Healthy Sweet Potato and Bean Protein Brownies

1 medium size sweet potato
15 ounces black beans or chickpeas (rinsed and drained)
3/4 cup medjool dates
2 scoops vanilla protein powder (see text for brand)
1/3 cup cocoa powder
1/4 cup dairy-free milk
1/3 cup runny peanut butter
1 tsp vanilla extract
1/2 cup unsweetened chocolate chips
Directions
- preheat your oven to 350 degrees.
peel and chop the sweet potato into small chunks.
in a pot, steam the sweet potato chunks until they are soft and easily pierced with a fork. - n a food processor, combine the cooked sweet potato, chickpeas, dates, protein powder, cocoa powder, dairy-free milk, and vanilla extract.
blend the ingredients until a smooth batter forms. - fold in the unsweetened chocolate chips.
transfer the batter into a large bread loaf pan lined with parchment paper.
bake in the preheated oven for 20-22 minutes. - allow the brownies to cool completely before slicing.
store the sliced brownies in the fridge for freshness. enjoy your healthy veggie and bean protein brownies!

hi! not sure exactly but this recipe is flexible and forgiving, so don’t worry about exactness!
