1medium size sweet potato
15ouncesblack beans or chickpeasrinsed and drained
3/4cupmedjool dates
2scoops vanilla protein powdersee text for brand
1/3cupcocoa powder
1/4cupdairy-free milk
1/3cuprunny peanut butter
1tspvanilla extract
1/2cupunsweetened chocolate chips
Instructions
preheat your oven to 350 degrees. peel and chop the sweet potato into small chunks. in a pot, steam the sweet potato chunks until they are soft and easily pierced with a fork.
n a food processor, combine the cooked sweet potato, chickpeas, dates, protein powder, cocoa powder, dairy-free milk, and vanilla extract. blend the ingredients until a smooth batter forms.
fold in the unsweetened chocolate chips. transfer the batter into a large bread loaf pan lined with parchment paper. bake in the preheated oven for 20-22 minutes.
