you could say that Homemade Vegan Superfood Cereal is sort of like granola, but it’s not as clustery and meant to be eaten as a cereal.

of course you don’t have to eat this deliciousness with dairy free milk, it’s just better that way!

Homemade Vegan Superfood Cereal makes a fabulous pairing with dairy free yogurt and some berries too.

my favorite way to eat Homemade Vegan Superfood Cereal is with almond milk, a little drizzle of nut butter or date syrup, banana slices and blueberries.

you can store this on your countertop for the week in an airtight container!

with lots of different nuts, chia seeds, organic oats and more, there is just so much goodness packed into this.

you can definitely make swaps for the nuts that i used if they’re not your thing.

i used a variety like raw cashews, pecans and almonds but use whatever you like best or have on hand.

for seeds, i went with chia seeds and you could also add hemp seeds! that would add a little bit of protein too.

shredded desiccated coconut is a must for me in this recipe because it gives Homemade Vegan Superfood Cereal such a nice and toasty flavor.

Homemade Vegan Superfood Cereal

Ingredients
  

  • 2 cups old fashioned oats
  • 3/4 cup chopped raw pecans
  • 1/2 cup raw slivered almonds
  • 1/2 cup chopped raw cashews
  • 1/3 cup shredded desiccated coconut
  • 1/4 cup chia seeds
  • 1/3 cup avocado oil
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon

Method
 

  1. preheat the oven to 325 degrees.
  2. mix all of the cereal ingredients until well-combined and everything is coated.
  3. transfer to a parchment lined baking tray and evenly distribute so that a rectangle forms.
  4. bake at 325 degrees for 18 minutes. remove the tray, rotate it 180 degrees and bake another 12 minutes.
  5. remove the cereal from the oven and let it cool down completely, at least 30 minutes. then, break the cereal apart.
  6. serve with your favorite foods and enjoy! store in an airtight container on the counter.
