Vegan Protein-Packed Pea and Hemp Seed Guacamole

1 cup peas
avocado oil
3 medium ripe avocados
1/4 cup hemp seeds
juice of 1/2 lime
1/2 tsp garlic powder
1/2 tsp onion powder
sea salt to taste
few tbsp chopped cilantro1 large cucumber cored
Directions
- preheat your oven to 375°f (190°c).
- on a baking sheet, spread out 1 cup of peas and drizzle them with avocado oil. roast them in the preheated oven for about 10 minutes or until they become slightly crispy.
- while the peas are roasting, halve and pit the avocados. scoop out the flesh into a mixing bowl.
- once the peas are roasted, add them to the bowl with the avocados.
- add 1/4 cup of hemp seeds, cilantro, the juice of 1/2 lime, 1/2 tsp garlic powder, 1/2 tsp onion powder, and sea salt to taste.
- mash everything together using a potato masher or roughly pulse in a food processor until you reach your desired consistency.
- serve the pea and hemp seed guacamole stuffed in cucumber boats or alongside crackers or chips for dipping. enjoy!
