Ingredients

  • shortbread:
    1 and 1/3 cup almond flour
    1 cup oat flour
    1/4 cup maple syrup
    1 tsp vanilla extract
    1/3 cup melted avocado oil or vegan butter

    caramel filling:
    1 cup runny almond butter
    1/3 cup maple syrup
    1 tsp vanilla extract
    1/3 cup oat flour
    1 tbsp avocado oil
    pinch of sea salt

    chocolate topping:
    3/4 cup chocolate chips (used lakanto for the macros)
    1/2 tbsp avocado oil

Directions

  • prepare shortbread base:
    -in a bowl, combine almond flour, oat flour, maple syrup, vanilla extract and melted avocado oil. mix until well combined and a dough forms.
    -press the dough into the bottom of a small parchment-lined baking dish, spreading it evenly. place it in the freezer to set while you prepare the caramel filling.
  • make caramel filling:
    -in a separate bowl, mix together almond butter, maple syrup, vanilla, avocado oil, oat flour and a pinch of sea salt until smooth and creamy.
    -remove the baking dish from the refrigerator and spread the caramel filling evenly over the chilled shortbread layer. return it to the freezer to set for a few hours.
  • prepare chocolate topping:
    -in a microwave-safe bowl, melt chocolate chips and avocado oil together in 30-second intervals, stirring until smooth.
  • assemble:
    -once the caramel layer has set, cut into bars/squares and dip or coat in the melted chocolate.
    -return the dish to the freezer and let it chill until the chocolate is set, usually about 1 hr. store in the freezer in an airtight container and thaw before eating.

  1. I just made this today. It’s delicious. I substituted almond butter for Haitian Peanut butter which is a runny consistency and has a little bit of cayenne pepper and ginger added to it to give it a kick. I used individual silicone cupcake molds. They are basically like healthy reese’s peanut butter cups with a little spicy warmth. This is a keeper!

    1. hi! there’s not really a replacement in this recipe :)! you could try an almond flour and coconut flour crust but would have to rework all of the other ingredient amounts.

  2. I made this today and it is absolutely delicious! I didn’t have Oat Flour or enough maple syrup, so subbed it with Coconut Flour and honey, and it worked very well. It will be a perfect healthy go-to when those sweet cravings hit 🙂

  4. Does the vegan butter have to be unsalted or can I use original Earth Balance butter?
    Additionally, for a caffeine-free version, can I sub chocolate for carob? And sub almond butter for sunflower butter?
