Mini Gluten Free Vegan Apple Pies

happy monday everyone :). made ya the most delicious ever Mini Gluten Free Vegan Apple Pies! i am so excited with how these turned out. you’re going to love every bite of this goodness. they taste rich, are pretty easy to make and are made with amazing ingredients.

they’re basically hand held apple pies, but of course you an eat them with a fork.

i one thousand percent recommend adding some ice cream on top too.

the filling is just divine! you cook the apples on the stove top in addition to baking them in the oven.

this ensures they’re super tender and caramelized. the cooking process on the stove is pretty short too, only about 6 minutes.

the baking time is about 26 minutes, thus within roughly 30 minutes, you can have a gourmet dessert that you would think came from a fancy restaurant.

there’s so much gooey goodness in the caramelized apple slices that you cook on the stove top!

to avoid overfilling the dough, i tried to get rid of some of the caramel and fill the dough mainly with apples.

i reserved some of the caramel to coat the top of the pies as you can see. this makes the texture even better, so i highly recommend.

the apple pies are very portable, so if you’re taking them on the go, they will hold up well!

honestly, they make the perfect dessert for the holidays. thanksgiving would be a great time to make the apple pies.

also, there’s pumpkin in the mini apple pies! mmm it makes the crust so perfect!

the dough is a little bit harder to handle just because it’s sticky, just giving you a heads up.

promise that it’s not too difficult though if you slightly wet your hands. just scoop up some dough, wet your hands, and flatten it into a circle.

then, you can add your filling, try not to overstuff it! also, you don’t want the caramel running out, so try to include mainly apples.

then, take another scoop of dough, wet your hands again and flatten it into a circle.

you place that on top of the apple filling, and pinch the sides to seal it shut.

Ingredients

  • crust
  • 1 cup gluten free all purpose flour

  • 1 cup almond flour

  • 1 tsp baking powder

  • 1/4 cup maple syrup

  • 1 tsp pumpkin spice

  • 1/4 cup almond milk

  • 1/2 cup pumpkin puree

  • filling
  • 1 and 1/2 medium size apples cut into small pieces

  • 1/4 cup room temp vegan butter

  • 1/4 cup maple syrup

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

Directions

  • preheat the oven to 350 degrees.
  • in a pan, add all filling ingredients and bring to a boil on medium heat. cook for about 6 minutes until the apples are slightly tender and a caramel-like sauce forms.
  • use a spoon to scoop up some dough, wet your hands, and flatten it into a circle.
  • then, add your filling, try not to overstuff it! also, you don’t want the caramel running out, so try to include mainly apples.
  • next repeat with the dough step and cover the top. pinch the sides of the dough to seal it shut and create the pies.
  • brush the caramel sauce leftover from the apples on top of the dough and bake at 350 degrees for 26 minutes.
  • store in the fridge or freezer in an airtight container and enjoy!
