good morning everyone! i can guarantee this is the best breakfast you’ll have all week long, Homemade Vegan Cinnamon Toast Crunch Cereal. the original cinnamon toast crunch isn’t vegan, so you know that i had to make my own. this recipe is really easy to make and honestly delicious.
cereal may look hard to create, but i promise that it’s not at all! with minimal ingredients and an easy process, you’ll be impressed!
all you’re going to do is mix the base of the cereal ingredients in a bowl until a thick dough forms and then roll it out until the dough is a very thin sheet, less than 1/4 inch thick.
there is a coconut cinnamon sugar coating and you may or may not like my method, but feel free to try whatever you would like.
i added the cereal to a bowl after it was baked and poured a tbsp or so of maple syrup on the baked cereal pieces. then, i added the coconut sugar and cinnamon and stirred with a large spoon to evenly coat.
the coconut sugar and cinnamon sticks pretty well this way but if you want, you can omit the maple syrup altogether,
another method to try is coating the dough with cinnamon sugar before it bakes. before using a pizza cutter to cut the dough into tiny squares, you can lightly brush the dough with coconut oil or vegan butter.
then, you can add the coconut sugar and cinnamon mixture to the top before you cut the dough into squares.
this method would probably work better in terms of getting the cinnamon and sugar to stick, i just like a fresh coating.
ok, so are you wondering if this cereal is crispy and crunchy? the answer is, YES! that’s why i bake it for 17 minutes! you’re going to be obsessed with the texture.
you’re only going to need minimal ingredients that you probably already have in your pantry if you make my healthier treats already!
- oat flour
- almond flour
- coconut nectar
- almond milk
- almond butter
- almond or vanilla extract
- coconut sugar
- maple syrup
you will need coconut oil or melted vegan butter if you want to brush the dough with it & coat with cinnamon sugar before it bakes! if not though, coconut oil or butter isn’t necessary.

Homemade Vegan Cinnamon Toast Crunch CerealCourse: BreakfastDifficulty: Easy
yields 2-4 servings depending on portion size!
1 cup almond flour
1 cup oat flour
2 tbsp coconut nectar or maple syrup
1/3 cup unsweetened dairy free milk
1/3 cup very creamy almond butter
1/2 tsp almond or vanilla extract
1/2 tbsp cinnamon
- cinnamon sugar coating
1-2 tbsp maple syrup for drizzling
3 tbsp coconut sugar
1 tsp cinnamon
- preheat the oven to 350 degrees.
- add the cereal ingredients ingredients to a bowl and mix well until a thick dough forms. roll out into a very thin sheet less than 1/4 inch thick. you can lightly brush the top with coconut oil and sprinkle the cinnamon sugar on top OR you can wait to do this until after they bake (if you wait see directions below). use a pizza cutter to cut into very small squares.
- bake at 350 degrees for 17 minutes. add to a large mixing bowl and drizzle as evenly as possible with maple syrup and then mix in the cinnamon sugar if you did not add it before baking.
- serve with dairy free milk and enjoy!
