Healthy and Gluten-Free Vegan Chocolate Chip Muffins

happy sunday! i love waking up on a sunday to a yummy breakfast, and today, that happened to be 1.5 of my Healthy and Gluten-Free Vegan Chocolate Chip muffins + some banana slices!

oh, and always coffee, always. what a combo that was! alex got home from the hospital (he works there) just in time to steal a bite from my plate and drink some coffee with me.

he drinks water though because after a 24 hour call, coffee isn’t such a great idea when you want to go to bed. but it’s all good, i drink enough for the both of us lol.

oh they’re so perfect texture wise too! Healthy and Gluten-Free Vegan Chocolate Chip Muffins have got it going on when it comes to being soft, fluffy and slightly fudgy in the texture department.

almond flour and gluten free all purpose flour are an amazing combination when it comes to baked goods!

i find the texture of my baked goods comes out super fluffy when i use the two together!

see what i mean now about the texture?! that bite shot always gets to me and is a necessity for legit every single dessert i make.

besides being super thrilled with the texture….um let’s talk about the TASTE!

ok, there’s an ingredient that you need in here to get the taste and texture on point.

it’s….applesauce! ok ok, not everyone likes apple sauce but i promise, you will NOT taste it.

also, if you can’t eat apples, just replace with mashed banana.

so, what all do you need?!

  • almond flour

  • gluten-free all purpose flour (use Trader Joe’s or the same blend)

  • flax meal

  • baking powder

  • almond butter

  • almond milk

  • maple syrup

  • apple sauce

  • chocolate chips

easy enough, right? you’re just going to need one large mixing bowl and a mixing spoon too! personally, i love parchment paper muffin cups, which i buy at Whole Foods.

the muffins come out easily every single time!

Healthy and Gluten-Free Vegan Chocolate Chip Muffins

Ingredients

  • 1 cup almond flour

  • 1/2 cup gf all purpose flour- see text above for brand used

  • 3 tbsp flax meal

  • 1/2 tbsp baking powder

  • 1/3 cup creamy and runny almond butter or any runny nut/seed butter

  • 3 tbsp maple syrupΒ 

  • 1/2 cup unsweetened almond milk or dairy free milk

  • 1/2 cup unsweetened apple sauce

  • 1/3 cup chocolate chips or however many you want

Directions

  • preheat the oven to 350 degrees.
  • mix the dry ingredients in a bowl and then add in the wet ones. mix well until a thick batter forms.
  • fold in the chocolate chips, add to parchment paper muffin cups and bake at 350 degrees for 25 minutes.
  • let the muffins cool a bit so they set well and then enjoy!

  1. Amazing recipe! First time I made it I followed the recipe exactly and they were delicious!! second time I substituted the following:

    Tahini instead of almond butter
    Mashed banana instead of apple puree
    Brown rice syrup instead of maple syrup

    (As they were all I had) and they turned out amazing as well!!! Def will make again πŸ™‚
