hey hey! happy thursday my friends! hope you’re all doing well and ready for another fantastic cookie recipe. as you may be able to tell from my IG, i’m kind of on a banana baked goods roll lately. banana bread makes a weekly appearance in our kitchen and i have some delicious banana cookie recipes on upbeetandkaleingit IG. i made Vegan Birthday Cake Banana Cookies in my food processor, which creates a silky smooth batter! also, it’s not Alex’s birthday but he is graduating from medical school tomorrow, so we have to celebrate with something delicious and super fun! he loves cookies and banana bread is his favorite, so Vegan Birthday Cake Banana Cookies are the best of both worlds.


neither the sprinkles or frosting is necessary, these cookies are amazing on their own! you can also add in some chocolate chips, raisins, bluebs or whatever you have on hand!

ingredients and directions
in a food processor, blend the following:
- 2.5 cups almond flour
- 1/3 cup coconut flour
- 3 large very ripe bananas (cut into smaller pieces before adding to the food processor)
- 3 tbsp olive oil
- 1 tsp baking powder
- 1 tsp almond extract (vanilla works too)
- 1/4 cup creamy almond butter
- 1/2 cup unsweetened vanilla almond milk
blend and then transfer to a bowl and add in a few tbsp of sprinkles or however much you would like! use a spoon to evenly distribute batter into cookies- i made 8 medium/large ones! bake at 350 degrees for 28 minutes on a parchment lined baking tray.
cool down and add the frosting- mix 3/4 cup vegan cream cheese, a few tbsp maple syrup, a dash of almond extract and if needed, a little almond milk!
