  3. combine vanilla protein powder, almond flour, maple syrup, date sugar, and the flax egg in a bowl.
  4. add unsweetened baking powder, apple cider vinegar and if needed a dash of almond milk. mix until well combined.
  5. fold in the vegan chocolate chips.
  6. scoop the dough onto the baking sheet, flatten slightly, and bake for 13-15 minutes.
  7. let the cookie cool on the baking sheet for a few minutes before transferring to a wire rack.

storage

store this cookie in an airtight container at room temperature for up to a week.

Ingredients

  • 1/4 cup vanilla protein powder (used Kos but any brand should work)
    1/4 cup almond flour
    1 tbsp maple syrup
    1 tbsp date sugar
    1 flax egg (1 tbsp flax meal + 3 tbsp water)
    1/2 tsp baking powder
    1 tsp apple cider vinegar
    2 tbsp vegan chocolate chips


  • * if dough is too try add 1 tbsp dairy free milk but mix before doing so!

  • double chocolate version (follow same directions to make)
    1/4 cup chocolate protein powder (used truvani but any brand should work)
    1/4 cup almond flour
    1 tbsp cocoa powder
    1 tbsp maple syrup
    1 tbsp coconut sugar
    1 flax egg (1 tbsp flax meal + 3 tbsp water)
    1/2 tsp baking powder
    1 tsp apple cider vinegar
    2 tbsp vegan chocolate chips

Directions

  • preheat oven to 350 degrees fahrenheit and line a baking sheet with parchment paper.
  • in a small bowl, mix 1 tbsp flax meal with 3 tbsp water to create a flax egg. let it sit for 5 minutes to thicken.
  • in a medium bowl, combine the kos vanilla protein powder, almond flour, maple syrup, date sugar, and flax egg. mix well.
  • add unsweetened baking powder, apple cider vinegar and if needed a dash of almond milk. stir until everything is well incorporated. fold in the vegan chocolate chips.

  • roll the dough into a large ball and flatten.
  • bake for 13-15 minutes, or until the cookie is golden brown and firm to the touch.
  • allow the cookie to cool on the baking sheet for a few minutes before transferring it to cool completely.
