Peanut Butter Chocolate Chip Protein Fudge

it’s the weekend, so we have to celebrate with Peanut Butter Chocolate Chip Protein Fudge! it’s oh so fudgy and decadent yet the ingredients are wholesome. thatโ€™s my favorite, to make healthier for you desserts that still taste really rich.

these gems are heavy on the peanut butter, in fact, itโ€™s the main star of the recipe.

on top of using peanut butter as the base, i also added some mini chocolate chips, which complete the recipe and make it taste like cookie dough.

Peanut Butter Chocolate Chip Protein Fudge is supposed to be stored in the freezer and we LOVE a good freezer treat, right!?

the fudge is creamy and really easy to store in the freezer. it thaws really quickly thanks to the runny peanut butter and coconut oil, so you donโ€™t need to let it thaw much at all!

while i used peanut butter for a classic flavor, you can definitely switch things up with almond butter, cashew butter or even sunbutter.

there are tons of nut and seed butter nowadays, so go with whatever flavors you like!

as per the title, there is protein in the fudge! i recommend using vanilla protein and any will work.

however, itโ€™s important to note the grams. i used two scoops that were 31g each, so 62 g total.

this will help you measure out how much protein you need to use. as far as the brand, i used garden of life but just about any will work!

Peanut Butter Chocolate Chip Protein Fudge

Ingredients

  • 1 cup runny peanut butter

  • 2 scoops vanilla protein (62 g total)

  • 1/4 cup melted coconut oil

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1/3 cup or more mini chocolate chips

Directions

  • add all ingredients but the chocolate chips to a mixing bowl and stir until a thick batter-like consistency forms.
  • then, fold in the chocolate chips and add to a parchment lined bread loaf pan.
  • place back in the freezer for 4 hours and then cut into slices.
  • store in the freezer in an airtight container and enjoy!
