Mini Funfetti Cookie Dough Cakes are the perfect single serving delicious desserts you need in your life. the cakes are fudgy, made with wholesome ingredients and may just be the most scrumptious thing you will ever taste!
you’re only twenty minutes away from pure vegan mini cake indulgence. ooooo how good does this look y’all?! al and i had the biggest craving for funfetti something and i just bought ramekins the other week…..so mini cakes it was!
previously, i’ve made a cookie dough mug cake, so i decided to adapt that recipe. basically, i made this version more like cookie dough and swapped the chocolate chips for sprinkles.
if you’re not a fan of cookie dough, then this recipe probably isn’t for you!

mini cakes are my favorite not so fancy way to make a dessert feel oh so decadent. it’s always fun to make cake in ramekins too, ya know, like your own personal size cake.
what’s all in Mini Funfetti Cookie Dough Cake?!
- almond flour
- coconut flour
- baking powder
- organic cane sugar
- apple cider vinegar
- vanilla extract
- nut butter
- almond milk
- sprinkles

if you don’t want to use sprinkles or can’t get ahold of any, chocolate chips would definitely be the best substitute! honestly, you could do lots of combos that would be delicious.
ya know what else sounds great? oatmeal raisin! you could add like 1/4 cup old fashioned oats and 1/4 cup raisins. the vanilla frosting on top would be perfect if you ask me, but you could also just leave it plain!

just to let you all know, this is a super thick batter! it’s not going to emulate a typical cake batter at all. it’s just like cookie dough, hence the name and the texture, so don’t think you did anything wrong once you see the texture.
pack it down into the ramekins but don’t overfill them. i definitely could have gotten three mini cakes with the batter but i chose to fill two almost to the top. since there’s only two of us, it just made sense lol.

in terms of frosting, i totally could have made my own but i was way too lazy haha. simple mills saves the day yet again! i’m pretty sure you can find their frosting at most grocery stores, but check the brand locator.

Mini Funfetti Cookie Dough Cakes

Ingredients
1 cup almond flour
1/4 cup coconut flour
1/2 tbsp baking powder
1/4 cup organic cane sugar or lakanto
1/2 tbsp vanilla extract
1/2 tsp apple cider vinegar
1/4 cup almond butter
1/2 cup unsweetened almond milk
1/4 cup sprinkles
- frosting for topping- see text for brand used
Directions
- preheat the oven to 350 degrees.
- mix the dry ingredients in a bowl and then add in the wet ones. mix until a thick cookie dough forms and place into 2-3 ramekins.
- bake at 350 degrees for 20 minutes and then let the cakes cool down completely.
- add frosting to the top if you would like and enjoy!
