Vegan Peanut Butter Chocolate Chip Blondies

hello and happy Friday eve! yay, i can’t believe it’s already Thursday! to celebrate, let’s make something super yummy and special, like Vegan Peanut Butter Chocolate Chip Blondies. they’re made with super simple ingredients and a secret one that creates the best fudgy texture.

this secret ingredient is applesauce by the way! you won’t taste the apple in the blondies and it just makes the texture perfect.

while the flavor is predominately peanut butter and chocolate chip, feel free to swap another nut or seed butter if you’re just not a fan or can’t have peanuts.

almond butter would be great if you want something with a more mild taste!

i’ve made lots of blondies and this is one of my favorite combinations, mainly because of the texture.

almond flour and oat flour are my two go tos when it comes to combining flours for the ultimate baked good!

while i have not tried any subs, you’re always welcome to but just know you’re subbing at your own risk lol.

i can’t guarantee they will come out as good if you use only oat flour for example.

they’re perfect for a night in if you want something vegan and indulgent but made with real foods.

Vegan Peanut Butter Chocolate Chip Blondies

Ingredients

  • 1 cup almond flour

  • 1 cup oat flour

  • 1 tsp baking powder

  • 1/2 cup coconut sugar

  • 1/3 cup unsweetened apple sauce

  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)

  • 1/2 cup runny peanut butter

  • 1/3 cup unsweetened almond milk

  • 1 tsp vanilla extract

  • 1/2 cup chocolate chunks or chocolate chips (more for topping)

Directions

  • preheat the oven to 350 degrees.
  • mix the wet ingredients in a bowl and then add in the dry ones. combine until a thick batter forms and then fold in the chocolate chips.
  • add to a parchment lined cake pan or 8 x 8 baking pan. bake at 350 for 25 minutes.
  • cool down so the blondies set and enjoy!
