Ingredients
3 cups finely pulsed broccoli (about 1 and 1/4 heads of broccoli)
2/3 cup chickpea flour
1/4 cup arrowroot flour
1/4 cup tahini
1 tsp garlic powder
1 tsp onion powder
1 tsp italian seasoning
1/4 tsp sea salt
1/4 cup vegetable stocktoppings
1/2 cup marinara
1/2 cup vegan mozzarella
Directions
- preheat your oven to 400 degrees fahrenheit and line a baking sheet with parchment paper.
- in a large bowl, combine the finely pulsed broccoli, chickpea flour, arrowroot flour, tahini, garlic powder, onion powder, italian seasoning, and sea salt. mix well until all the ingredients are thoroughly combined.
- add the vegetable stock and mix until a thick mixture forms. the dough should be sticky but manageable.
- divide the mixture into four equal portions and form each into a small pizza crust on the prepared baking sheet. use your hands or a spatula to flatten and shape each portion into a round or rectangular crust, about 1/4 inch thick.
- bake the crusts in the preheated oven for 15 minutes, or until they start to turn golden and firm up.
- remove the crusts from the oven, add your desired toppings, and bake for an additional 15 minutes, or until the toppings are cooked and the crusts are crisp. remove parchment paper if you would like the broil a minute or two at the end.
- allow to cool slightly before serving.
