water, coffee, news, cozy breakfast….repeat. that’s pretty much my morning routine before I jump into work. slowing down a little in the morning is super important to me and it sets the tone for the day along with a hearty breakfast that is literally glowing. Nourishing Sweet Potato Oatmeal is a must-have for the fall, winter or really any time of the year.
it’s not only a quick breakfast to make, but it’s also loaded with nutrients and heartiness to keep you full.


you can totally use pumpkin purΓ©e but Whole Foods had a lot of canned sweet potato and i love it almost as much as pumpkin! it’s a nice switch up and fairly similar! finding pumpkin purΓ©e has been a little difficult this year, so i’m all about the sweet potato.
if you want to make your own, go for it! i don’t have the time or patience lol but it’s always an option :).


this recipe is packed with all of the spices like cinnamon, pumpkin spice and all spice. it really is the definition of cozy and kind of tastes like pie with the addition of a little bit of maple syrup.

Nourishing Sweet Potato Oatmeal

1.5 cups old fashioned oats
1 (15 oz) can sweet potato
2 cups water
1 cup unsweetened almond milk
1.5 tbsp maple syrup
1 tsp cinnamon
1/4 tsp pumpkin spice
1/4 tsp all spice
Directions
- add all ingredients to a large pot at once.
- stir well and once the mixture comes to a boil, cook on medium heat for 10 minutes.
- stir often to avoid the oatmeal sticking to the bottom of the pan.
- top with your favorites and enjoy!

What a delicious recipe! I just made this for my family for breakfast, we loved it. We did split it between 3 and it was very filling.
