Feel Good Lemon, Chickpea and Sweet Potato Turmeric Soup

1 cup very finely diced white onion
3-4 cups cubed sweet potatoes
1 can rinsed and drained chickpeas
1/4 cup olive oil
1/4 cup nutritional yeast
1/2 tbsp garlic powder
1/2 tsp turmeric
1/3 cup lemon juice
1 tbsp ginger juice
1 cup thick and creamy coconut yogurt
7 cups vegetable brothfresh herbs like parsley for garnishing
Directions
- heat olive oil in a large pot over medium heat. add diced onion, cubed sweet potatoes, and rinsed chickpeas. sauté for about 8-10 minutes until onions are translucent and sweet potatoes start to soften.
- add nutritional yeast, garlic powder, and turmeric to the pot. sauté for another minute to allow the spices to become fragrant.
- pour in lemon juice and ginger juice, followed by the coconut yogurt and vegetable broth. stir well to combine all the ingredients.
- bring the soup to a gentle simmer. reduce the heat to medium-low and let it cook for about 45-50 minutes, or until the sweet potatoes are completely tender.
