if you’re looking for an amazing holiday dessert that’s not exactly traditional, try my amazing Vegan Peanut Butter Pecan Pie Brownies!
they are made with delicious ingredients that are wholesome and packed with flavor.
there is a recipe for pecan pie bars on my blog, and for the last couple of months, i have attempted to make a brownie version of them!

the original version is Vegan and Gluten-Free Peanut Butter Pecan Pie Bars, which you should totally try too!
it definitely took a little bit of trial and error (four attempts), but now they’re PERFECT.
the brownie layer is fudgy and the pecan layer is candied and a little crunchy. that’s what we want here, moist brownies and a harder pecan crust.
the brownie layer is made with a base of almond flour and oat flour, which you probably know by now is my favorite combo for baked goods!
almond flour provides healthy fats and the oat flour is a great binder. it provides substance to the brownies.

as for the pecan pie layer, that’s made on the stovetop! you just need pecans, vegan butter, peanut butter, cinnamon and maple syrup.
then, that’s added to the top of the brownie layer and baked in the oven for 30 minutes.
one of the most important aspects of the recipe is the cooling part. the brownies have to cool down completely before you cut into them.
i recommend using a very sharp knife to cut them and you can add a little bit of water for a clean cut.
if you have leftover Vegan Peanut Butter Pecan Pie Brownies, just store them in the fridge or even the freezer.

Vegan Peanut Butter Pecan Pie Brownies

- brownies
1/2 cup gluten free oat flour
1 and 1/2 cups almond flour
1 tsp baking powder
1/2 cup cocoa powder
2 flax eggs (2 tbsp flax meal + 6 tbsp water) let it set 4-5 min
1/3 cup maple syrup
1 tsp vanilla extract
1/3 cup runny peanut butter
1/2 cup dairy free milk
1/3 cup dairy free mini chocolate chips
- pecan pie layer
1 and 1/2 cups chopped pecans
1/4 cup runny peanut butter
1/3 cup vegan butter
1/4 cup maple syrup
1/2 tbsp cinnamon
1/2 tsp vanilla extract
Directions
- preheat the oven to 350 degrees.
- mix the brownie ingredients until a thick batter forms and add to an 8 x 8 parchment lined baking pan.
- for the pecan pie layer, add all ingredients to a pan and once it comes to a boil, cook on medium high heat for 4 minutes and stir often.
- add the pecan pie layer to the top of the brownie batter and bake at 350 degrees for 30 minutes.
- cool down COMPLETELY, at least 45 minutes-1 hr and then cut into squares.
- enjoy and store in the fridge or freezer in an airtight container.
