Vibrant and Hearty Vegan Winter Salad

Ingredients

salad:
3 cups thinly sliced green cabbage (preferably savoy)
2 cups lacinato kale, thinly sliced
2 pears, cut into pieces
1 cup cooked vegan bacon, broken into small pieces
3/4 cup chopped pecans
1 cup crumbled vegan feta
3/4 cup chopped dates
dressing:
1/4 cup avocado oil
1/3 cup hummus
2 minced garlic cloves
1 tbsp liquid aminos
1/4 cup pomegranate juice (cranberry juice works as well)
1 tbsp maple syrup
Directions
- in a large mixing bowl, massage your kale and cabbage with a small amount of avocado oil for a minute or so. this will break down the fibers.
- combine the thinly sliced green cabbage and lacinato kale.
add the cut pears, cooked vegan bacon pieces, chopped pecans, crumbled vegan feta, and chopped dates to the bowl with the cabbage and kale. - in a separate bowl, whisk together the avocado oil, hummus, minced garlic cloves, liquid aminos, pomegranate juice (or cranberry juice), and maple syrup to make the dressing.
- pour the dressing over the salad ingredients in the large mixing bowl.
toss the salad gently to ensure all ingredients are well coated with the dressing.
allow the salad to sit for a few minutes to let the flavors meld together. - serve the salad in individual bowls or on a platter, and enjoy your delicious and nutritious creation!
