happy friday everyone, i am pleased to let you know that Healthy Date Caramel Nut and Seed Granola is here and it’s fabulous! there’s ZERO added sugar in this recipe and the granola is completely sweetened with medjool dates, how cool is that?
there’s tons of nutrients packed into this goodness and the texture of the granola is unreal.
you’re actually going to bake the granola twice. the texture ends up nice and firm, almost like brittle, but there’s still a slight chewy component, it’s amazing.

Healthy Date Caramel Nut and Seed Granola bakes at 350 degrees for 12 minutes, then you rotate the tray 180 degrees and bake it another 13 minutes.
the granola has to come out of the oven and cool down COMPLETELY.
that’s what gives us those clusters, so this is an extremely important step. then, you can break apart the granola into clusters and flip them to for an even bake.
to evenly ensure a firm texture, we can bake the granola 6-7 more minutes at 350 degrees.


ah, it’s kind of a lot for granola, but if you think about it, that’s truly just one extra step and super worth it.
since there is no added sugar and the granola is completely sweetened with dates, it’s not a very sweet granola.
in fact, i would call this mildly sweet, so just a heads up! if you are looking for more sweetness, then you could add maple syrup.
i think 2-3 tbsp would be enough to elevate the sweetness but not take things over the top by any means.

also, if you want to add more sweetness, you could add chocolate chips to the finished product! this would of course add sugar, but make the recipe more decadent.
Healthy Date Caramel Nut and Seed Granola is also excellent to eat as a cereal! in fact, that might be my favorite way to eat it.
it is indeed nature’s cereal as everything in the recipe is super good for you and nutrient dense.

Healthy Date Caramel Nut and Seed Granola

- date caramel
1/3 cup room temp coconut oil
10 large medjool pitted dates (softer the better)
1/2 cup runny almond butter
1/2 cup almond milkΒ
1/2 tbsp vanilla extractΒ
- additional ingredients
3 cups old fashioned oats
1/2 cup raw pumpkin seeds
1 cup raw pecans
3/4 cup raw cashews
1/4 cup chia seeds (can add less)
1/2 tbsp cinnamon
Directions
- preheat the oven to 350 degrees.
- add the date caramel ingredients to a high powered blender and blend until a thick and smooth consistency forms.
- then, mix the granola ingredients in a bowl until all of the oats are well coated.
- transfer to a parchment lined baking tray and bake at 350 degrees for 12 minutes.
- remove the tray, rotate it 180 degrees and bake another 13 minutes.
- remove the granola from the oven and let it cool down completely, at least 30 minutes. then, break the granola into clusters and flip it so the side that was on the bottom is facing up.
- bake an additional 6-7 minutes. cool down again completely and enjoy! store in an airtight container.
