add the date caramel ingredients to a high powered blender and blend until a thick and smooth consistency forms.
then, mix the granola ingredients in a bowl until all of the oats are well coated.
transfer to a parchment lined baking tray and bake at 350 degrees for 12 minutes.
remove the tray, rotate it 180 degrees and bake another 13 minutes.
remove the granola from the oven and let it cool down completely, at least 30 minutes. then, break the granola into clusters and flip it so the side that was on the bottom is facing up.
bake an additional 6-7 minutes. cool down again completely and enjoy! store in an airtight container.
