Vegan and Gluten Free Strawberry Shortcake Chewy Bars are a take on my chocolate chip chewy bars, which i am also obsessed with.
they’re gluten free as long as you use gluten free oats! i had a bag of freeze dried strawberries sitting in the pantry and can’t think of a better way to use them.
you can find freeze dried strawberries at many grocery stores-for sure Whole Foods.
the recipe for the bars is really simple and you make everything but the glaze in a food processor.
all of the ingredients can be thrown in there and pulsed until a sticky consistency.
then, the chewy dough can be added to a parchment lined bread loaf pan and placed in the freezer for 30 min.
in the meantime, i made the glaze, which is simply just store bought vanilla frosting mixed with melted coconut oil.
it’s totally optional, but i do recommend adding it if you would like something a little more decadent.
Vegan and Gluten Free Strawberry Shortcake Chewy Bars are sweetened with 1/4 cup maple syrup, and then the frosting has sugar too.
they taste a lot like those fabulous ice cream bars that you may have eaten as a kid. in my opinion, those were one of the best ice cream bars of all time.
my brother and i would devour those during the summertime after swim team practice. ah, i miss the good old days!

there is a coconut flavor too since i use desiccated coconut shreds.

Vegan and Gluten Free Strawberry Shortcake Chewy BarsCourse: Desserts, No Bake
1 and 1/2 cups shredded coconut and freeze dried strawberries (pulse .8 ounces freeze dried strawberries + 3/4 cup shredded coconut- you may have leftover)
1 and 1/2 cup gluten free oats (used one degree organics)
1/3 cup creamy almond butter
1/4 cup maple syrup
1 tsp vanilla extract
1/4 cup dairy free milk
- 1/4 cup vanilla store bought frosting melted with 1 tbsp coconut oil
- add all chewy bar ingredients to a food processor and pulse until a sticky and grainy texture forms.
- add to a parchment lined bread loaf pan and place in the freezer for 30 min.
- remove, add the glaze and leftover pulsed strawberries + coconut and place back in the freezer for 2 hours.
- store in the fridge in an airtight container and enjoy!
