Birthday Cake Protein Cookie Dough Bark
Recipe by MaryCourse: Snacks, Sweet5
servings15
minutesIngredients
1/2 cup vanilla protein powder
1/4 cup gluten-free oat flour
1/2 cup almond flour
1/4 cup maple syrup
1/4 tsp almond extract
1 tsp vanilla extract
1/4 cup dairy free yogurt
a couple tbsp dairy-free milk (start with a couple tbsp, blend and test the texture. you likely will have to add more, just depends on the protein powder brand since they’re all different)
vegan vanilla frosting or cream cheese (for topping)
sprinkles for mixing in and topping
Directions
- in a blender or food processor, combine all ingredients but the sprinkles and frosting/cream cheese.
- blend the ingredients until a thick and dough-like consistency forms. test your dough to see if the texture is on point. you may need to add a little more dairy free milk but start small.
- once the dough is formed, mix in the sprinkles and line a baking sheet with parchment paper.
- transfer the dough onto the parchment paper and use a spatula or your hands to spread it out evenly to your desired thickness.
- place the baking sheet in the freezer and allow the dough to freeze for about 2 hours, or until it is firm.
- once the dough is firm, remove it from the freezer and spread the vegan vanilla frosting or cream cheese evenly over the top.
- sprinkle the frosting or cream cheese with your choice of sprinkles.
- return the baking sheet to the freezer and allow the bark to freeze for another couple of hours, or until the frosting or cream cheese is firm.
- once completely frozen, remove the bark from the freezer and break it into pieces.
- serve and enjoy! store any leftovers in an airtight container in the freezer.

Hello. I was wondering if you could provide a recipe for a frosting to put on top. The store brands all have refined sugar which I can not have. Thank you for sharing your delicious recipe.
hi gina! if you search “frosting” on my blog, you will find some! 🙂
Hi, looks so delicious! Do you think I can use dairy yogurt instead of vegan?
definitely!!
