how to make the “breadsticks”

  1. prep the quinoa: soak 1 1/4 cups uncooked quinoa in hot water for 30-45 minutes, then drain.
  2. blend the base: in a high-speed food processor or blender, combine the soaked quinoa, 3/4 cup vegetable broth, 1 tsp garlic powder, 1 tsp onion powder, and 1/2 tbsp everything but the bagel seasoning. blend until smooth.
  3. bake the breadsticks: pour the batter into a greased 8×8-inch pan and spread evenly. bake at 375°f for 12 minutes until set.
  4. add the cheese: remove from the oven, sprinkle with 3/4 cup dairy-free shredded cheese, and bake for another 10 minutes until melted.
  5. finish it off: sprinkle with more everything but the bagel seasoning before serving.

storage tips

if you have leftovers (which is rare because these are so good!), store them in an airtight container in the fridge for up to 4 days.

to reheat, pop them in the oven at 350°f for a few minutes or warm them up in a skillet for a slightly crispy edge.

Ingredients

  • 1 1/4 cup uncooked quinoa, soaked in hot water for 30-45 minutes, then drained
    3/4 cup vegetable broth
    1 tsp garlic powder
    1 tsp onion powder
    1/2 tbsp everything but the bagel seasoning, plus more for topping
    3/4 cup dairy-free shredded cheese- can also use miyoko’s liquid mozz

Directions

  • preheat the oven to 375°f and grease an 8×8-inch baking pan.
  • in a high-speed food processor or blender, add the soaked and drained quinoa, vegetable broth, garlic powder, onion powder, and everything but the bagel seasoning. blend until smooth.
  • pour the mixture into the prepared baking pan, spreading evenly.
  • bake for 12 minutes, until the breaksticks are set. remove from the oven and drizzle or sprinkle the dairy-free cheese evenly over the top.
  • return to the oven and bake for another 10 minutes, until the cheese is melted. can broil for a minute or so at the end- monitor closely.
  • sprinkle with more everything but the bagel seasoning before serving and enjoy!

  1. I have a bag of frozen quinoa that just needs to be microwaved in order for it to cook. Can I cook this and use it instead of uncooked quinoa that’s been soaked?
