pizza cauliflower steaks: a low-carb, veggie-packed alternative

if you’re looking for a fun and delicious way to enjoy all the flavors of pizza while keeping it low-carb, these pizza cauliflower steaks are about to become your new obsession.

they’re tender, flavorful, and topped with melty vegan cheese and marinara sauce.

the best part? they’re super easy to make, require minimal ingredients, and are a perfect way to add more veggies to your plate.

taste and texture

these cauliflower steaks deliver all the classic pizza flavors you love—savory marinara sauce, cheesy goodness, and a hint of italian seasoning.

the cauliflower base brings a subtle nutty flavor and turns perfectly tender when roasted.

the edges get slightly caramelized and crispy, giving you a satisfying bite, while the center stays soft and melt-in-your-mouth delicious.

it’s pizza… with a veggie twist :).

a low-carb alternative

traditional pizza can be heavy and carb-loaded, but swapping the crust for roasted cauliflower steaks makes this a lighter, more nutrient-dense option.

cauliflower is naturally low in carbs and calories but packed with fiber and vitamins, making it a great choice if you’re watching your carb intake or just looking to sneak more veggies into your meals.

how to make pizza cauliflower steaks

these come together quickly and require just a handful of ingredients:

  1. prep the cauliflower: trim the stem, slice the cauliflower into 1-inch thick steaks, and season them with oil, garlic powder, italian seasoning, salt, and pepper.
  2. roast: bake at 425°f for 25 minutes until the steaks are tender and golden. flipping halfway helps them cook evenly.
  3. top and bake again: add your favorite marinara sauce and vegan cheese, then pop them back in the oven until the cheese is melty and bubbly. broiling for a minute or two at the end gives the cheese a golden finish.

topping options

while marinara and vegan mozzarella are classic, you can easily customize these cauliflower steaks with your favorite toppings:

  • veggies: sliced mushrooms, bell peppers, onions, spinach, or olives.
  • proteins: vegan sausage, tofu crumbles, or chickpeas.
  • flavor boosters: fresh basil, red pepper flakes, nutritional yeast, or a drizzle of vegan pesto.

you can get creative and make different “pizzas” on each steak—perfect for when you want variety in one meal.

storage

leftover cauliflower steaks can be stored in an airtight container in the fridge for up to 3 days.

to reheat, simply pop them back in the oven at 375°f for about 10 minutes, or warm them in a skillet over medium heat.

avoid microwaving, as it can make the cauliflower soggy.

final thoughts

these pizza cauliflower steaks are the perfect combination of comfort food and wholesome eating.

they’re low-carb, gluten-free, and completely plant-based, making them a great choice for anyone looking to enjoy pizza without the heaviness.

serve them as a light main dish or pair them with a salad for a balanced meal.

no matter how you enjoy them, these cauliflower steaks are sure to hit the spot!

Ingredients

  • ingredients
    1 large head of cauliflower
2-3 tablespoons avocado oil or olive oil
    1/2 teaspoon garlic powder
    1/2 teaspoon italian seasoning
sea salt and black pepper to taste
    1/2 cup marinara sauce
1/2 – 3/4 cup shredded vegan mozzarella cheese or miyoko’s liquid mozzarella
fresh basil, parsley or red pepper flakes for garnish (optional)

Directions

  • prep the cauliflower:
preheat the oven to 425°f and line a baking sheet with parchment paper. remove the leaves from the cauliflower and trim the stem, keeping the head intact.
  • cut the cauliflower into 1-inch thick “steaks.” you should get about 4 good steaks from the center of the head. smaller florets will naturally fall off, and you can roast those separately.
  • season and roast:
brush both sides of the cauliflower steaks with avocado oil and season with garlic powder, italian seasoning, salt, and black pepper. place the steaks on the baking sheet and roast in the oven for 25 minutes, flipping halfway through, until golden and tender.
  • add the toppings:
remove the cauliflower steaks from the oven and spoon marinara sauce on top of each steak. sprinkle shredded vegan mozzarella cheese generously over the marinara.
  • melt the cheese:
return the steaks to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • garnish and serve:
top with fresh basil, parsley or red pepper flakes for a pop of flavor. serve immediately and enjoy your pizza-inspired cauliflower steaks!
